Whoopie Pies a.k.a. Gobs

I can best describe this delicious burger of sugar as a cake turned inside out with the icing in the middle.

As for how these pies got their name. Some people in my town say when men would open their lunch buckets and see their wife had packed them one of these delicious pies they would shout out "Whoopie!" Other people call them gobs though and say it comes from the men who worked in the coal mines calling the pies Gobs because lumps of coal refuse were called gob piles. Whichever name you prefer, people will still have no idea what you're talking about so call them what you will.

Gob Mix:
1 cake mix (any chocolate cake mix or devil's food chocolate cake mix)
1 (3-ounce) package of instant chocolate pudding

Preheat oven to 425 degrees. Lightly grease the cookie sheets. In a large bowl, prepare cake mix according to directions on box, but using 3/4 cup of water instead of listed amount. Beat 1 minute. Add instant chocolate pudding dry mix and beat 1 more minute. Drop 2 tablespoons  for each cake onto cookie sheet, leave approximately 1 inches between each cake. Bake for 5 minutes. Allow to cool and transfer onto waxed paper.

Filling:
5 tablespoons flour
1 cup milk
1 cup sugar
1/2 cup butter, softened
1/2 cup vegetable shortening
1 teaspoon vanilla extract



To make the filling, place flour into saucepan and slowly add milk, stirring until smooth. Set over medium heat and cook, stirring until very thick. Remove from heat and allow to cool completely. In a medium bowl, mix together sugar, butter, shortening, and vanilla using a mixer if you have one or just stir thoroughly. Add the cooled flour mixture and whip until fluffy.

When the cakes are completely cool, spread the flat side (bottom) of one chocolate cake with a generous amount of filling. Top with another cake, pressing down gently to distribute the filling evenly. Repeat with each gob.

Wrap individually in plastic wrap and store in refrigerator to preserve their moisture.
